One-Pot Sukuma wiki and Matumbo recipe

Another one of the Kenyan special style meals is Matumbo, AKA tripe. While you can make tripe wet fry or stew, I have another style for you to try. Sometimes you will have a very fatty tripe; in such cases, a one-pot sukuma wiki and Matumbo recipe will work perfectly.

What is Matumbo?

It’s also what we call tripe in English, and it features the first and second stomach parts of the cow, goat or sheep. Well, in this piece, we are talking of the beef tripe, and of course, you can also use goat or sheep tripe.

It’s one of the most common meals at home mainly because it’s cheaper, but other than that, it’s delicious and decadent. Some people use it to make soup, which is common along the Tanzanian border.

Why make the Matumbo one-pot meal?

It takes a short time to make

In Kenya, we are used to making a three-meal course to make it a complete meal. Often we have starchy parts, protein (fish, meat, eggs) and vegetables.

In this case, we will mix the protein with the vegetables. It means the time you would take to cook them separately now is limited.

Its easier

I mean, you don’t have to use so much of the ingredients to make one dish more than another. Now you will only need to make your tripe and add the vegetable.

It’s affordable

When the economy is rough, we all look for cheaper meals, which may just be one of the cheapest meals to take. Remember, we never struggle to find Kales/sukuma wiki, and it’s also cheaper. With this, you limit the resources you need to make it.

It’s delicious

You can still make it side by side or into a wet fry. But trust me, with the right ingredients, this meal is just as delicious when you eat it with your favourite ugali.

Of course, it’s not one of the everyday meals since most people cook it side by side.

One-pot sukuma wiki and Matumbo recipe

What you need

  • Akg of Matumbo – please make sure you take the fatty one. It enhances the flavour.
  • Sukuma wiki
  • Onions
  • Garlic
  • Tomatoes
  • Green pepper
  • Royco
  • Salt
  • Curry powder
  • Lemon juice
  • Cumin and bay leaves

Method

Wash the Matumbo clean. Clean the parts properly because you don’t want to eat unwanted parts. Next, add a tablespoon of vinegar, a little salt, and water, then soak for an hour.

Drain the excess water, then add bay leaves and garlic paste. Next, set in a pressure cooker to boil for another hour. At this point, it should be softer and ready for the frying process.

Chop the vegetables in preparation for the following steps.

Let’s fry it. Add a little bit of olive oil/cooking oil in another clean saucepan set. Then add the cumin to cook in the process.

To follow up, add the onions and allow them to brown up. Once ready, add the ginger garlic paste to cook more.

Next, add your bell peppers and cook for a minute before adding your pureed tomatoes.

Then you can add your favourite spices; curry powder, royco and any other spice you choose.

If you like it hot, you can add chilli or chilli powder, which will make it nicely hot and ready.

Cover for a minute before you add in the drained and boiled Matumbo. Toss it around a few times and cover it for another two minutes to cook it right.

Finally, add the kale or Sukuma wiki and then toss it to have it fully cooked. This should take about five minutes, and the food is now ready.

Serve it with your favourite ugali for lunch or dinner.
