I have tried so many cake recipes, and I find this one the easiest to make every time. Whether it’s your first time or you want to go easy, here is how to make a simple cake at home.

The best part is that you only need the five basic ingredients; flour, sugar, margarine, baking powder, and eggs. The preparation matters and the time you invest in making the cake determines the outcome.

If you have a sweet tooth like mine, you’ll love this recipe, but the best part is; it’s easy to make, especially if you have a cake mixer.

Usually, I take the quantities and double them if I want to make a bigger size. This one is a double size because I was making it for the family during the holiday. Enjoy!

Ingredients

  • Flour 746gms
  • Sugar 380 gms
  • Margarine 350gms
  • Eggs 10 (Note I used eight and then added a little milk to perfect the consistency. You should use 12 eggs for this recipe, though.)
  • Baking powder 1TBSP
  • Salt and lemon zest.

Method

Set the eight eggs in the cake mixer and then whisk it. Keep whisking until the eggs become foamy. Take the time in this step, as it will determine whether the cake is crumbly. A mixer is great, but you can also use the hand whisk. Note it takes more time here 10-15min).

Meanwhile, prepare the baking tray if you don’t have a nonstick baking tray. Line it up with a baking sheet or apply butter to the baking sheet’s surface. Also, preheat the oven.

Add sugar and allow it to keep whisking to ensure you don’t lose the foam. Do this for about 10 minutes and keep checking the consistency.

Add the margarine and go on whisking, ensuring the mixture is still foamy.

Now add the flour. I mostly like to sift mine for even better results. Albeit, remember to add in bits, not all the flour at once.  And at this point, you can also add the salt. Use a wooden spoon to mix it, and you want to stir in one direction.

Add milk if you need to have it attain the proper consistency.  I didn’t use enough eggs, so I needed to add milk to achieve the appropriate consistency.

Add the zest or flavoring of your choice and stir again with the spoon. Check the consistency, and pour the content into the ready baking sheet if you like it.

Now set it in the oven but get the heat to 180C for the first 30 minutes and then 130C for another 60 minutes. It may take longer, depending on the size.

After 90 minutes, check if it’s cooked using a fork or knife. If the fork still comes wet, you can add more time to cook.

Remove it from the oven and set it on a plate to cool.

Serve as a snack or with your favorite tea and coffee.

Note

  • Practice makes perfect, but with an easy recipe like this, you will always get it right the first time.
  • You can always reduce the eggs and use milk if you don’t want to use many eggs. Although for the first time, make it with 8-10 eggs.
  • To kill the eggy smell, you can use Vanilla, lemon zest, or lemon rinds
  • You could have your cake ready for breakfast in just over an hour and 30 minutes.
  • Make sure you use the right baking tray to avoid burning.
  • Cakes are the sweet taste of life, and you can enjoy them too.
