How to Make Mukimo Using Githeri

We have discussed Mukimo in depth before, but do you know how to make it with githeri? In Kenyan households, you often readily have githeri in the house, and sometimes, we make mukimo with read githeri.

What is Mukimo?

Mukimo is a mash of different veggies, including potatoes, maize, and kahorora. In this case, our githeri is a mix of maize and beans. I like our Kenyan Mukimo recipe, but sometimes, we want to add a zing. Usually, we enjoy githeri and Mukimo separately, but we can also use a combo.

Ingredients:

  • 2 cups of githeri (boiled maize and beans)
  • Potatoes, peeled and cubed
  • Kahurora leaves [Fig-leaf gourd]
  • Onion, finely chopped
  • Salt to taste
  • Cooking oil

Method

Assuming you already have githeri ready, you can proceed to the next steps. If not, boil a mix of maize and beans. You will then add it to the potatoes before mashing everything.

Peel and wash the potatoes in a saucepan. Next, put them in a pot of salted water and let it boil. Make sure the potatoes are soft and easily mashable. Drain the water and set the potatoes aside.

Add the clean kahurora to the pan to cook. Use pumpkin leaves or spinach if you don’t have the preceding choice.

Traditionally, we cook the veggies together with potatoes and, of course, we then gently mash them, or what we call in gikuyu ‘Kima’. Here, we’ll cook them separately and then mix them.

At this point, the veggies are fully cooked. To make them soft, you can use a blender. We want them to mash up into the potatoes.

Once the vegetables are cooked, add the boiled potatoes, salt, and githeri to the pan and mash everything together. You can use a potato masher or a cooking stick. Mix well until everything is evenly combined.

What to eat with Mukimo made with githeri

This meal is one of the most versatile options because you can even eat it as is. However, I like to add vegetables like cabbage and a bit of meat to make it a balanced meal.

It is still good if you want to take it with tea. Sometimes, you can also add the pea sauce to make it even better.

Can I add my seasoning?

Of course, anyone can add their favorite seasoning. You can play around with the spices to make it even better.

Can I mash, cook, and mash everything together?

I’m assuming you mean when you already have the githeri ready. And yes, you can. Note that traditionally, we just cooked the potatoes and veggies and then mashed everything up.

Tips for making good Mukimo

  • Don’t use excess water since that will make it watery.
  • Make sure o mash it until its smooth.
  • For leftovers, fry some spring onion and then add mukimo. Of course, you are going to love it.
